Cinnamon Chocolate Pound Cake

With everything going on nowadays, I tried to find something to make me happy…even if only for just a little while. So, today I made a pound cake. That led me to think that some of you might enjoy the recipe too. Since I can’t stand the way people write fifty million words before actually giving you a recipe, I’m not going to do that. Without further ado, here is my recipe.

Ingredients

1/2 pound salted butter

3 cups sugar

6 eggs

3 cups plain flour

1/2 pint whipping cream

1 tablespoon vanilla extract

5 tablespoons cocoa powder

1/2 teaspoon cinnamon

1/4 cup strong black coffee, cooled (This is optional.)

Directions

Allow eggs and butter to reach room temperature. Preheat oven to 300 degrees F.

Sift flour, cocoa powder, and cinnamon together.

Using a stand mixer or blender, cream butter and sugar together. Add eggs one at a time. Blend until smooth after each egg is added.

Add flour, cocoa powder, cinnamon, whipping cream, and vanilla. Add the coffee now if you are using it. Mix well.

Pour into well greased bunt pan. Bake for 1 hour 10 minutes. Use a long skewer to check that the cake is done all the way through. Continue baking and checking every 5 minutes if more time is needed.

Remove from oven when done. Allow to cool in the pan for 45-60 minutes. The cake will still be warm, but flip it out now rather than waiting for it to cool completely. This will increase the chances of it turning out in one piece.
